All of them passionate about the very best of local and Scottish produce, they are Martin Hollis of the Old Course Hotel, Golf Resort and Spa, Alan Matthew (Fairmont St Andrews) Ian Macdonald (St Andrews Links) and David Kinnes (Rufflets Country House Hotel).
First to feature is Martin, now a familiar figure to visitors when Fife Farmers’ Market makes its monthly visit to St Andrews.
Martin is the executive chef at the five red star Old Course Hotel, Golf Resort & Spa. He manages a brigade of 28 chefs – including their training – and oversees all menu planning for the resort.
This covers the 3 AA rosette-awarded Road Hole Restaurant, the Sands Grill, the Road Hole Bar, the Jigger Inn, the Duke’s Golf Club as well as the recently opened Hams Hame, St Andrews newest 19th hole behind the Old Course’s 18th green and beneath the Hamilton Grand residency.
Prior to his time at the Old Course Hotel, Martin has worked at other leading hotels in Scotland, including Gleneagles and Turnberry.
A member of the Academy of Culinary Arts, the Master Chefs of Great Britain and a board member of the Federation of Chefs Scotland, Martin holds various medals at Scot Hot & Hotel Olympia, including best in class Hotel Olympia.
He has been three times a finalist in Scottish Chef of the Year and twice a semi-finalist in National Chef of the Year.
A regular at many cookery and food shows – including serving on numerous judging panels – Martin was first reserve for the Bocuse d’Or 2013/14 – the culinary world’s equivalent of the Oscars.
This year, Martin and the Old Course Hotel have teamed up with the Fife Farmers Market to run a series of cookery demonstrations on the first Saturday of each month in St Andrews.
